- 1 lb ground chicken
- 1 egg
- 1/2 yellow onion, diced
- 1/2 Granny Smith apple, peeled and diced
- 1/2 cup fine breadcrumbs
- 2 large sweet potatoes
- 2 Tb olive oil
- 1 tsp soy sauce
- 2 oz cheddar cheese, freshly grated
- 1/4 cup parsley, chopped
- 1/4 cup walnuts, finely diced
- 1 inch piece of ginger, grated
- 1 tsp salt
- 1/2 tsp cinnamon
- 1/2 tsp coriander
- 1/2 tsp cumin
- 1/2 tsp nutmeg
- maple syrup to taste
- Salt and cayenne to taste
Instructions
- Preheat your oven to 400°F (200°C). Bake sweet potatoes for about 60–75 minutes until tender.
- Sauté diced onion and apple in olive oil until softened. Add soy sauce, mix well, and cool.
- Combine ground chicken, egg, breadcrumbs, sautéed mixture, and seasonings in a bowl; mix gently.
- Form into meatballs (about 2 inches) and place on a greased baking sheet. Bake for 15 minutes.
- Meanwhile, mash cooked sweet potatoes with butter, maple syrup, spices, salt, and cayenne until smooth.
