- 1 pound chicken breast (skinless, boneless, cut into 1-inch cubes)
- 5 tablespoons low-sodium soy sauce
- 2 tablespoons apple vinegar
- 1 tablespoon sesame oil
- ½ cup cornstarch
- 1 small onion (sliced)
- 1 small red bell pepper (cut into cubes)
- 1 small green bell pepper (cut into cubes)
- 5 dried red chilies (deseeded)
- 3 cloves garlic (minced)
- 1 inch ginger piece (thinly sliced)
- 1 tablespoon Sichuan peppercorns (roasted, crushed)
- Vegetable oil for frying
Instructions
- Whisk together all sauce ingredients in a bowl and set aside.
- Marinate chicken with soy sauce and vinegar for at least 10 minutes.
- Coat marinated chicken pieces with cornstarch.
- Heat vegetable oil in a wok over high heat and fry chicken until golden brown, about 3–4 minutes per batch.
- Stir-fry onions, bell peppers, chilies, garlic, ginger, and Sichuan peppercorns in the same wok.
- Combine cooked chicken with sautéed vegetables and pour the prepared sauce over everything; toss to coat.
