Ingredients

  • 1 pound chicken breast (skinless, boneless, cut into 1-inch cubes)
  • 5 tablespoons low-sodium soy sauce
  • 2 tablespoons apple vinegar
  • 1 tablespoon sesame oil
  • ½ cup cornstarch
  • 1 small onion (sliced)
  • 1 small red bell pepper (cut into cubes)
  • 1 small green bell pepper (cut into cubes)
  • 5 dried red chilies (deseeded)
  • 3 cloves garlic (minced)
  • 1 inch ginger piece (thinly sliced)
  • 1 tablespoon Sichuan peppercorns (roasted, crushed)
  • Vegetable oil for frying

Instructions

  1. Whisk together all sauce ingredients in a bowl and set aside.
  2. Marinate chicken with soy sauce and vinegar for at least 10 minutes.
  3. Coat marinated chicken pieces with cornstarch.
  4. Heat vegetable oil in a wok over high heat and fry chicken until golden brown, about 3–4 minutes per batch.
  5. Stir-fry onions, bell peppers, chilies, garlic, ginger, and Sichuan peppercorns in the same wok.
  6. Combine cooked chicken with sautéed vegetables and pour the prepared sauce over everything; toss to coat.
